Epic Rice Krispies Treats

You know how rice krispies treats are wonderfully gooey and delightfully crispy? I do too. A while back I found this version of the classic recipe, made them and they were awesome! The trick to her perfect treat is to mix in unmelted marshmallows at the end so there are concentrated pockets of goo… brilliant!  

So, while I was enjoying my treat, it occurred to me that I also wanted to have chocolate involved somehow. I am of the opinion that a sweet isn’t worth the calories if there isn’t chocolate, so here’s what happened next. I melted chocolate chips and “frosted” the top of the krispies, then I added sprinkles. I have never looked back. Please understand, I don’t throw the word “epic” around. These earned that name.

These can be dangerous to have around, they go down so easily! The only way I can exercise self control is to not have them near me, so I don’t make them often. I did have a hankering the other day though, so… I documented my process (it’s a smidgen different than Cookies and Cup’s recipe) and am sharing it with you now!

What you need

5 tablespoons of butter

8 cups, plus 2 cups of mini marshmallows

6 cups of krispie cereal (I used the knock off brand- sorry, not sorry)

½ tsp salt

½  tsp of vanilla extract

2 cups semisweet chocolate chips

Sprinkles to taste

Step 1- Line a pan with tin foil and butter it! (sorry no photo of this- ooops!)

Step 2- In a large pot melt your butter and get it nice and hot.

Step 3- Add salt, vanilla extract and 8 cups of mini marshmallows. Stir pretty much constantly until marshmallows are melted.

Step 4- Remove from heat, add in the krispies and keep stirring until they have been even mixed with the melted marshmallow.

Step 5- Keep stirring and add in your two cups of mini marshmallows- this arm workout is just a perk of making these.

Step 6- Now press your gigantic pile of krispies treats into the pan (I wet my fingers while doing this or else, my hands would turn into krispies treat mittens- delicious, yes, functional, not at all.) *Place your pan of treats in the fridge for an hour or so until it is nice and cool.

Step 7- Remove your pan from the fridge. Put two cups of chocolate chips in a microwave safe bowl. Microwave on high for 30 seconds, remove and stir chocolate. Give it another 30 seconds on high and stir again. Repeat this step as needed- Keep an eye on this, you don’t want to burn your chocolate! It won’t be totally liquidy from just the microwave, you need to stir and stir! When the bowl is good and warm, it helps to melt the chips while you stir!

Step 8- Pour melted chocolate over the krispies treats and use a baking spatula to smooth it over the whole pan.

Step 9- Now, decorate your chocolate with sprinkles! Place the pan back in the refrigerator for another hour or so until the chocolate has hardened.

Step 10- Remove from pan and tinfoil and use a sharp knife to cut your epic treats into enjoyable chunks!
